Sauteed asparagus with dijon vinaigrette

Ingredients
- 2 TSP dijon mustard
- 2 TBSP sherry or red wine vinegar
- 2 TBSP extra virgin
- coarse salt and ground pepper
- 1 pound thin asparagus trimmed and cut into 2 and 1/2 inch lengths

Step 1
whisk mustard, vinegar, 1 TBSP oil in a medium bowl- season with salt and pepper
heat remaining TBSP oil in large skillet over medium heat and add asparagus and season
reduce heat to medium low, cook stirring frequently for about 10-12 minutes (if spears begin to brown reduce heat to low)
transfer asparagus to serving dish, drizzle with vinaigrette and serve immediately
