Pumpkin Chocolate Chip Mini Muffins

Ingredients
- Makes 12 mini muffins
- 1/4 cup coconut flour (where to buy coconut flour)
- 1/3 cup pumpkin puree
- 1 tsp pumpkin pie spice (non irradiated, like this one)
- 1/4 tsp sea salt
- 1/4 tsp vanilla
- 3 eggs
- 1/2 tsp baking soda
- 1/4 tsp apple cider vinegar
- 2 tbsp full fat coconut milk (where to buy bpa-free, no additives)
- 1 tbsp coconut sugar
- 1/3-1/2 cup chocolate chips (I like this brand)

Preparation
Step 1
Pre-heat the oven to 350°. Mix together ingredients and blend with a hand blender or food processor. Make sure that there are no lumps of the pumpkin in the batter.
2. Gently stir in the chocolate chips (you can put more or less depending on your preference).
3. In a mini muffin tin lined with mini muffin liners scoop the batter into each muffin cup almost to the top. Bake for 10-20 minutes or until a toothpick inserted comes out clean.
