Raspberry -Sour Cream Crumb Cake

Ingredients
- Topping:
- 1 cup flour
- 2/3 cup sugar
- Zest of one lemon
- 1/2 cup butter, melted
- Cake:
- 1 3/4 cups flour
- 1 cup sugar
- 2 teaspoons baking powder
- 1/4 teaspoon baking soda
- 1/4 teaspoon salt
- 3 large eggs
- 1 cup sour cream
- 1 teaspoon vanilla extract
- 2 cups fresh raspberries
- 2 Tablespoons confectionary sugar

Preparation
Step 1
1. Preheat oven to 350 degrees and grase and flour 10 inch psring form pan
2. Make crumb topping by mixing flour, sugar and zest in small bowl. Then pour melted butter over and combine with a fork. Set aside
2. In bowl of electric mixer, combine flour, sugar, baking powder, baking soda and salt
3. In another bowl wisk together eggs, sour cream and vanilla until blended
4. Mix wet into dry and mix until smooth and fluffy, about 2 minutes
5. Spoon batter into prepared pan and spread evenly. Then cover evenly with raspberries. Then cover with crumb topping
6. Bake at 350 degrees fro 38-42 minutes Until toothpick comes out clean
7. Dust with powdered sugar after cooled fo 20 minutes
