Blue Cheese Potatoes

- 1 1/2 lb Small White Waxy Potatoes
- 4 Tbsp. Butter
- 4 Tbsp. Blue Cheese
1) Bring butter and blue cheese to room temp, smush together with fork until blended.
2) Cut potatoes into bite size pieces, boil until soft (not mushy). About 10 minutes.
3) Drain and toss in cheesy butter.
4) Sprinkle with chives, salt, and pepper.
