Ingredients
- 2 1/2 lbs. Idaho Potatoes, peeled
- 1 Large Onion, chopped
- 2 large eggs
- 1 cup Panko bread crumbs
- 1 tbs. cornstarch or flour
- Canola oil

Step 1
In processor fitted with shredding disk, shred potatoes; move to kitchen towel-lines sieve. Twist towel to squeeze out liquid.
In processor with blade, process onions and eggs 30 sec. In bowl, mix Panko, cornstarch and onion puree. Stir in potatoes. Season with salt and pepper.
In skillet over medium heat, heat 1/2" oil.
Working in batches, shape potato mixture into patties ( 3 tbs each). Cook 5 min. or until golden, turning once. Drain. Serve immediately with applesauce
