Ingredients
- 2 medium unpeeled red potatoes, cubed
- 1 c cued cooked ham, cubed
- 1/2 c diced red bell pepper
- 1/2 c coarsely chopped celery
- 1 tsp butter
- 2 T flour
- 1 can chicken broth
- 1 can evaporated milk
- 1 can creamed corn
- 2 T sliced chives
- salt & pepper to taste
- crumbled bacon

Preparation
Step 1
Heat butter over medium heat and saute pepper and celery until crisp-tender. Stir in flour; heat until bubbly. Gradually add broth, evaporated milk and corn. Whisk until blended.
Add potatoes, bring to a boil. Reduce heat; cook, uncoverd for 10 mins, or until potatoes are tender. Stir in ham, heat through. Remove from heat and season with salt and pepper. Top with bacon, if desired.
