Nantucket Cranberry Pie
I found this recipe on the back of a bag of cranberries. It has become a family favorite.
- 2 C fresh or frozen cranberries
- 1/2 C sugar
- 1/2 C walnut or pecan pieces
- 2 eggs
- 3/4 C softened butter
- 1 C sugar
- 1 cup flour
- 1 tsp almond extract
Preheat oven to 350 degrees.
Place cranberries in a buttered 9 or 10 inch glass pie pan.
Add sugar and nuts over the berries and toss to coat.
For the topping - cream eggs and butter with sugar.
Add flour and almond extract to the mixture, lightly toss with a fork to mix.
Pour topping over the cranberries and bake for 35 to 40 minutes.
Serve warm with whipped cream or vanilla ice cream.
