Ingredients

  • 2.5 lbs. potatoes - quartered, boiled and drained
  • 6 eggs
  • 1 stick butter
  • 1 sweet onion
  • croutons or dry bread cubes
  • milk

Details

Preparation

Step 1

Mash potatoes
Beat in eggs
In frying pan, melt 1/2 stick butter
Add chopped onion, brown
Add bread or croutons and stir until coated
Once all onions and croutons are added to the mashed potatoes
Add milk until mixture is thick soup
Salt and pepper to taste
Cover and bake at 400 degrees for 1 hour
Uncover until browned
