Cheddar-Bacon-Apple Dressing

Ingredients

  • 4 ounces (1/4 pound) bacon, chopped
  • 1 onion, diced
  • 1 apple, peeled, cored and medium diced
  • 1 (14-ounce) bag cornbread stuffing cubes or homemade
  • 1 3/4 cups chicken stock
  • 4 scallions, chopped
  • 6 ounces Cheddar cheese, shredded
  • 1 egg, beaten

Step 1

1. Preheat the oven to 350 degrees F. In a sauté pan over medium heat, cook bacon until crispy. Remove bacon to a plate and reserve. Add the onion and cook until soft, about 4 minutes. Add the apples and cook for 8 minutes more. Remove from heat.

2. In a large bowl, combine bread cubes and chicken stock. Let sit for 5 to 10 minutes. Pour contents of saute pan into the bowl. Add the scallions, 2/3 of the Cheddar cheese, and egg. Spoon the mixture into a greased 2-quart ovenproof shallow baking dish or gratin dish. Sprinkle the remaining cheese on top. Bake in the oven for 30 minutes uncovered until golden brown on top. Sprinkle the cooked bacon on top.
