Roast Beef and Sun-dried Tomato Sandwich

  • 8 slices Rosemary Olive Oil Loaf
  • 1 pound Roast Beef, sliced thinly
  • 1/2 cup sun-dried tomatoes in oil, chopped
  • 6 ounces roquefort, crumbled
  • 2 tablespoons olive oil
  • 1/2 cup mayonnaise
  • 1 tablespoon fresh rosemary, minced
  • 1 tablespoon fresh lemon juice
  • kosher salt, to taste
  • ground black pepper, to taste

Step 1

Directions:

1. In a small bowl, mix the mayo, rosemary and lemon juice together. Season with salt and pepper.

2. Brush both sides of the bread with the olive oil. In a moderately hot skillet, grill the bread on both sides until golden brown.

3. Once the bread is cool, spread the bottom piece generously with rosemary mayo. top with roast beef, sun-dried tomatoes and roquefort.

4. Spread some rosemary mayo on the top piece of bread and cover the sandwich.

5. Slice in half on the diagonal and serve.
