Kimberly's Glazed Carrots

Ingredients
- 2 lbs. carrots, peeled and sliced
- 1 T. vegetable oil
- 1-1/4 cup chicken broth
- 1/4 cup honey
- 2 T. red wine vinegar
- 4 T. brown sugar
- 2 T. butter
- salt & pepper to taste

Preparation
Step 1
Heat oil on med-high heat. Cook carrots about 10-15 min, stirring often. Cover with broth, honey, salt, pepper, and vinegar. Cover and cook about 15 min. Add brown sugar and cook, uncovered, until almost liquid is gone. Add butter and melt into carrots, stirring to coat.
