Sweet Potato Dumplings

Ingredients
- 2 cups sweet potatoes; chopped - medium cubes
- 1 cup sugar
- 2 cups of water
- 1 cup hot apple juice
- 1/2 cup margarine or butter; softened
- 1 T vanilla extract
- 1/2 cup flour
- 1 egg

Preparation
Step 1
Combine potatoes, sugar, and water in a sauce pan; cook for 15 minutes and then drain well.
Place sweet potatoes in a large bowl
Whip in the butter, vanilla, flour and egg
Pour the hot juice into a large shallow casserole dish
sprayed with non-stick cooking spray.
Drop the sweet potato mixture by tablespoonfuls into the hot juice.
Bake at 350 degrees for 25 minutes
