Vegan Sweet Potatoe Casserole

Great recipe for both vegans and non-vegans. A nice alternative to the traditional mashed sweet potatoes with marshmallows

Ingredients
- TOPPING:
- 4 sweet potatoes cooked and peeled
- 2 tblsp. soy margarine (I use earth balance)
- 1/4 cup soy mile
- 1/4 cup orange juice
- 1 tsp. vanilla
- 1/4 cup sugar
- 1/4 cup maple syrup
- 1/2 tsp. salt
- 3/4 tsp. nutmeg
- 3/4 tsp. cinnamon
- 1/4 cup soy margarine
- 1/2 cup brown sugar
- 1/3 cup white flour
- 3/4 cup chopped pecans
- 2 tblsp. maple syrup

Preparation
Step 1
Preheat oven to 350 and spray a 2 quart dish with non-stick spray
Mash the sweet potatoes with soy margarine until smooth
Add the soymilk, orange juice, vanilla, sugar, maple syrup, salt, nutmeg and cinnamon
Pour into prepared dish
Mix the topping ingredients together until well combined
Sprinkle over the casserole and bake 45 minutes or until heated throughout
