Chicken with Avocado-Pomegranate Salsa

Ingredients

  • SALSA:
  • 4 boneless, skinless, chicken breast halves
  • 1/4 C lemon juice
  • 3 T olive oil, divided
  • 1 T pomegranate molasses
  • Salt & pepper
  • 1 large lemon for zest
  • Seeds for 1/2 pomegranate
  • 3 small thinly sliced green onions
  • 2 avocados, cut in 1/4" dice
  • 2 T olive oil
  • 1 T chopped parsley
  • 1 t finely minced jalapeno
  • 1 t pomegranate molasses
  • 1/2 " t Kosher salt

Preparation

Step 1

Pound chicken breasts to 1/8" thickness. In shallow bowl, stir in lemon juice, 2 T olive oil, pomegranate molasses, salt & pepper. Add chicken, turn to coat, cover & refrigerate 20-1hr.
Make salsa:
Finely grate zest from lemon, then squeeze out 1 T juice. Add pomegranate seeds, green onions, avocado, olive oil, parsley, jalapeno, pomegranate molassese & salt. Fold gently with spatula. Season to taste with additional salt.

Light grill and cook chicken till cooked, 3 min. per side. Serve with salsa.
