Ingredients
- 1 Lemon, Zest and juice
- 1 Zuchini- Thinly Sliced
- 1 Yellow Squash Thinly Sliced
- 4 Stalk Swiss Chard torn into pieces
- 1/2 cup onion, chopped
- 1/4 cup peppers chopped
- 1 tblsp olive oil
- 2 cups half and half
- 1/2 cup ricotta
- 2 T Marsala wine
- 2 T butter
- 1 cup Italian cheese blend
- 2 PKGs Raviolis, frozen

Step 1
Place pan of water on stove. Bring to boil-lower temp then add raviola-1 layer at time and cook to pkg directions gently.
Place onions and peppers in saucepan with olive oil. Saute. Add squash and swiss chard.Season with salt and pepper. Cook until softened. Remove from pan and squeeze lemon juice over vegetables.
In saucepan add butter. Heat until melted, add half and half and gently reduce liquid. After slightly reduced add ricotta cheese and wine. Cook until sauce has thickend. Add remaining cheese, Add lemon Zest from the lemon, Salt and Pepper. Simmer until cheese has melted.
Place raviolis in bowl- 1 layer 1/2 add vegetable and 1/2 sauce. Repeat. This keeps the raviolis from breaking.
