Summer Squash Casserole

Ingredients

  • 6 medium summer squash
  • 1 large white onion
  • 1 box of Stove Top stuffing mix
  • 4 tbsp butter
  • 1 can cream of chicken soup
  • 16 oz sour cream

Preparation

Step 1

1. Slice squash and onion
2. Boil until both are softened - do not overcook - drain
3. Melt butter in saucepan - remove from heat
4. Add stuffing mix to melted butter
5. Spread half of mixture in 13 x 9 pan
6. In large bowl, mix cream of chicken soup and sour cream - add drained squash and onion
7. Mix thoroughly and pour on top of stuffing mix
8. Sprinkle remaining stuffing mix on top
9. Bake at 350 degrees for about 30 mins
