Hearty Potato Leek Soup

Ingredients
- 3 tablespoons vegetable oil
- 8 medium potatoes, peeled and cubed
- 3 leeks, washed and finely chopped
- 2 medium onions, peeled, ends removed, finely chopped
- 3 cloves garlic, peeled and mincced
- 6 cups chicken broth
- 1 cup skim milk
- 1 1/4 teaspoon white pepper
- 1/2 teaspoon paprika
- Green onions or parsley for garnish, optional

Preparation
Step 1
In a large stock pot heat the vegetable oil. Add potatoes, leeks, onions and garlic to the pot. Saute the vegetables over medium/hugh heat until they are translucent; approximately 5-6 minutes. Next, add chicken broth to the pot. Bring mixture to a boil then allow to simmer, uncover, for approximately 15-20 minutes or until the vegetables are tender. When vegetables are tender remove from heat. Using potato masher, mash the cubes of potatoes leaving some pieces whole. The consistency of the soup at this point should be relatively creamy. Return the soup to the heat and add milk, white pepper, and paprika. Stir and simmer over a low heat, uncovered an additional 10 minutes. Add garnish of green onions or parsley to each serving if desired
