- 1 c. vegetable oil
- 2 c. brown sugar
- 1-1/2 c. pumpkin
- 2 eggs
- 1 teaspoon vanilla
- 3 c. all-purpose flour
- 1 teaspoon salt
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1-1/2 teaspoon cinnamon
- 1/8 teaspoon ginger
- 1/8 teaspoon cloves
- Filling: (for a good amount of filling - double the recipe)
- 1-1/2 sticks softened butter (12 Tablespoons)
- 1-1/4 c. powdered sugar
- 1-1/2 teaspoons vanilla
- 2-1/2 c. marshmallow creme

Directions
Cookie: Cream oil and sugar; add pumpkin, eggs, vanilla, and dry ingredients. Drop by tablespoonfuls on greased cookie sheet. Bake at 350 degrees for 10-12 minutes.
Filling: Cream butter and powdered sugar until fluffy. Beat in vanilla. Beat in marshmallow -- creme until blended well. Divide evenly between 12 cookies. Top with the other 12 cookies.
