Ingredients

  • 2 cups plus 2 tbsp flour
  • 1/2 cup sugar
  • 1/2 cup slivered almonds
  • 1/8 tsp salt
  • 2 sticks butter melted
  • 1 tsp vanilla
  • 1/1 /2 cups sugar
  • 1/4 cup flour
  • 5 large eggs
  • 1/2 cup seedless rasberry jam, stir to loosen
  • 1/2 cup fresh lemon juice - about 3 lemons
  • 1 1/2 tsp lemon zest

Preparation

Step 1

1. Preheat oven to 350 degrees
2. Line 13 x 9 inch pan with tin foil
3. Combine 2 cups of the flour, the sugar, almonds and salt in food processor
4. While processor is running add butter and vanilla
5. Reserve 2/3 cup of the crumb mixture and press the rest into the bottom of the prepared pan
6. Bake for 25 mins
7. Blend 2 tbsp flour into reserved crumb mixture
8. Whisk sugar and flour. Whisk in eggs, then rasberry jam. Whisk in lemon juicer and zest
9. Remove crust from oven and pour filling over crust
10. Return to oven and bake 15 mins
11.Sprinkle crumbs over top and bake an additional 15 mins
12. Cool
