Jim's Halibut with Remoulade Sauce

Serve this tasty fish with fries or baked potatoes and green beans or fresh tomatoes and salad greens. To save time, make the sauce earlier in the day and refrigerate until it's time to bake the fish.

Ingredients
- One halibut roast (2-3 lbs) or 6 single-serving fillets.
- Remoulade Sauce
- Combine the remaining ingredients in a bowl, blending well.
- 1/2 cup mayonnaise /
- 1/2 cup sour cream
- 2 to 3 green onions with 3 to 4 inches of green, finely chopped
- 2 tablespoons finely minced fresh parsley
- 2 tablespoons finely chopped fresh dill
- 1 clove garlic, finely minced, optional
- 2-3 tablespoon fresh lemon juice
- 3 tablespoons Creole mustard or similar whole grain mustard
- 2-3 T crushed capers and 2-3 anchovy fillets can also be added (optional)
- 1/2 teaspoon salt
- 1/8 teaspoon Freshly ground black pepper
- A few dashes of Tabasco or hot sauce, to taste
- A few dashes or Worcestershire sauce

Preparation
Step 1
Sauté a couple of sliced onions in butterPreparation: In a lightly oiled baking dish, spread the sautéed onions. Arrange the halibut roast or fillets. Spread sauce over the roast or each fillet. Bake until fish is cooked through and flakes easily with a fork (10 minutes per inch of thickness).
