Fruit Salsa Salad with Arugula and Creamy Blue Cheese Sauce

Ingredients
- 8 pears - a variety
- 4 apples - a variety
- 4 English cucumbers
- 3 medium red onions
- 2 lemons
- 1 large container baby arugula or 2 small containers
- pomegranate seeds for garnish (optional)
- 2 containers feta cheese creamy dressing

Preparation
Step 1
Chop pears,. apples, English cucumbers, and red onions into small 1/4 inch cubes (brunoise). Do not peel the fruits or vegetables unless there are bad spots on them. As you chop the vegetables and fruits, sqeeze juice over them and mix to prevent discoloring.
Mix the feta cheese dressing with the cut vegetables and fruit and refrigerate until ready to serve.
Just prior to serving, mix the baby arugula into the vegetables and fruit. Garnish with pomegranate seeds (optional). Serve.
Serves 30
Note: Ingredients may be reduced for smaller amounts
