MUSHROOM AND SAUSAGE SOUP

Ingredients

  • 8 ounces sliced white or brown mushrooms (approx. 2 1/2 - 3 cups)
  • 10 ounces ground spicy sausage
  • 1/2 cup diced onion
  • 1/2 cup diced green bell pepper
  • 1 Tablespoon minced garlic
  • 2 Tablespoons tomato paste
  • 2 cups fresh or canned tomatoes, chopped
  • 1 1/2 cups chicken stock
  • 2 Tablespoons oregano
  • Salt/pepper to taste

Preparation

Step 1

In 4 quart saucepan, heat a small amount of oil over medium-high heat. Add the sausage and brown (about 5 minutes). Add mushrooms, onions and bell peppers; cook about 5 minutes. Add tomato paste and garlic; cook 2 minutes. Add chopped tomatoes, chicken stock and seasonings. Bring to boil. Reduce heat to simmer and cook until flavors are blended (about 20 minutes).
