Boston Market Creamed Spinach

Ingredients
- White Sauce:
- 1 20-oz. package frozen chopped spinach
- 1 C white sauce (thick)
- 1/2 C sour cream
- 1 tsp. salt
- 2 T. butter
- 2 T. finely chopped onion
- 1/4 C water
- 3 T. butter
- 4 T. flour
- 1/4 tsp. salt
- 1 C milk

Preparation
Step 1
Prepare white sauce using a medium low setting. Melt butter in a sauce pan, add flour, and 1/4 tsp. salt until creamed together. Add milk a little at a time on medium heat, constantly stirring with a whisk until it becomes thick and smooth.
Place butter in 2 qt. saucepan on medium heat. Add onions and cook until transparent. Add spinach and water. Cover, and lower heat. Add 1 tsp. salt. When spinach is almost done, add white sauce and sour cream. Simmer until cooked.
I like to sprinkle a little grated mozzarella or Monterey Jack cheese on top when serving.
