Ingredients
- Dressing:
- 2 lbs red potatoes
- 1/2 lb green beans (optional)
- 4 green onions
- 2 tbsp parsley
- 1 tbsp fresh tarragon
- 2 tbsp red wine vinegar
- 2 tbsp lemon juice
- 2 tbsp Dijon mustard
- 3/4 cup olive oil

Preparation
Step 1
Wash potatoes and bring to boil. Cook for 7-10 minutes until tender. Peel off center strip of skin (for looks). Set aside.
Combine first three ingredients for dressing together and slowly add olive oil to thicken.
Pour dressing over potatoes and add onion, parsley and tarragon. Mix and serve.
