Ingredients

  • cherry frosting:
  • 3/4 cup plus 1 tsp. flour
  • 1/3 cup plus 1 tsp. unsweetened cocoa powder
  • 1 tsp. baking powder
  • 1/2 tsp. baking soda
  • 1/2 tsp. ground cinnamon
  • 1/4 tsp. salt
  • 1/3 cup unsalted butter softened
  • 3/4 cup sugar
  • 2 eggs
  • 1 tsp. vanilla
  • 1/2 cup sour cream
  • 1 recipe cherry or chocolate frosting
  • 1 recipe chocolate dipped cherries
  • 8oz. carton sour cream
  • 1 cup whipping cream
  • 1 1/2 cups powdered sugar
  • 2 Tbs. maraschino cherry juice
  • chocolate frosting:
  • 8oz. carton of sour cream
  • 1 cup whipping cream
  • 1 1/2 cups powdered sugar
  • 1/4 sifted cocoa powder
  • chocolate covered cherries:
  • 16 maraschino cherries with stems
  • 1/2 cup semi sweet chocolate chips
  • 1 tsp. shortening

Preparation

Step 1

preheat oven to 350
grease 2 6x2" round cake pans or spring form pans
mix teaspoons of flour and cocoa powder and dust inside of pans
set aside
in bowl combine flour, cocoa powder, baking powder, baking soda, cinnamon, and salt, set aside
in large bowl beat butter on med. for 30 sec.
add sugar
beat till smooth and fluffy
beat in eggs and vanilla till smooth
beat in sour cream and flour mix
spread batter evenly in pans
bake 22-26 min. or until top springs back when pressed
and edges come away from sides of pan
cool in pans 10 min.
cool on rack rest of the way
use serrated knife to cut cakes in half lengthwise into 4 layers
place bottom layer on plate, spread with 2/3 cup frosting
repeat with remaining layers
swirl final frosting layer into swirls and peak
refrigerate

frosting:
beat ingredients on med-high until fluffy

cherries:
drain 16 cherries with stems and pat dry
combine chocolate and shortening in microwave safe dish
cook at 50% 11/2 - 2 min. until melted stirring once
dip cherries and place on wax paper until set
store covered up to 24 hrs.
