Greek Style Baked Fresh Cod

Makes an excellent meal with a fresh garden salad.

This recipe also works well with halibut, red snapper, and sea trout.

Ingredients

  • 4 Tablespoons Extra Virgin Olive Oil
  • 2 Cod Fillets, skinned and boned
  • Kosher Salt and Pepper, to taste
  • 4 Cups Green Peppers, cored, seeded and chopped
  • 1 5 oz can Black Olives, halved
  • 1/4 Cup Onion, finely chopped
  • 1 Tablespoon Garlic, minced
  • 2 Cups Tomatoes, canned, drained and chopped
  • 1 teaspoon Oregano
  • 1/2 Cup Clam Juice, bottled
  • 1/4 teaspoon Red Pepper Flakes
  • 1 Bay Leaf, whole
  • 1/2 pound Feta Cheese, crumbled

Preparation

Step 1

Preheat oven to 450 degrees.

Coat the bottom of a baking pan with 1 tablespoon of the Olive Oil. Arrange the fish fillets close together in the pan. Sprinkle the fish with salt and pepper.

Heat the remaining 3 tablespoons of oil in a frying pan; add the green peppers, olives, onion, and garlic cook over high heat until wilted. Add the tomatoes, oregano, clam juice, red pepper flakes, and bay leaf. Stir and cook for about 5 minutes.

Spoon the sauce over the fillets. Sprinkle the feta cheese over the sauce and bake for about 15 minutes.
