Ingredients
- 3 cups fresh baby spinach leaves
- 2 cups arugula
- 1/4 red onion, sliced fine
- 1/2 cup raw pecan halves, roughly chopped or whole
- 1 cup chopped cucumber
- 2 small avocados, chopped
- 2 cups fresh sliced strawberries
- DRESSING
- 1 1/3 cups sliced strawberries
- 1/2 cup balsamic vinegar
- 1 whole shallot, chopped (or 1 clove garlic + 1/4 onion, chopped)
- 4 teaspoons fresh thyme (or 1 1/3 tsp. dried thyme)
- 2 1/2 teaspoons Dijon mustard
- 1/2 teaspoon ground black pepper
- 1/2 cup water

Step 1
Combine all ingredients for the salad in a bowl and set aside.
Combine ingredients for dressing in a high-powered blender and blend until smooth. Pour desired amount over salad and toss until well-combined. Keep any leftover dressing in refrigerator in a sealed glass jar.
