Noodle Cake with Spicy Peanut-Chicken Stir-Fry

Ingredients

  • 1 Tbsp salt
  • 1 (9-ounce) pkg fresh Chinese noodles
  • 4 scallions, sliced thin
  • 4 boneless, skinless chicken breasts (about 1.5 lbs), cut into 1/4" thick slices
  • 2 Tbsp soy sauce
  • 2 Tbsp Chinese rice cooking wine
  • 3/4 cup low-sodium chicken broth
  • 2 tsp cornstarch
  • 4 Tbsp vegetable oil
  • 2 serrano chiles, seeded and chopped
  • 5 garlic cloves, sliced thin
  • 1/2 cup roasted peanuts, chopped

Preparation

Step 1

1. Bring 2 quarts water to a boil in pot. Add salt and noodles and cook until tender, about 3 minutes. Drain and toss with 2 scallions. Meanwhile, toss chicken with 1 Tbsp soy sauce and 1 Tbsp rice wine and marinate 10 minutes. Whisk remaining soy suce and rice wine, broth and cornstarch together in small bowl.

2. Heat 1 Tbsp oil in large nonstick skillet over medium-high heat until smoking. Add noodles to skillet and press with spatula into even layer. Cook until scrip, 2-3 minutes. Place back of baking sheet over skillet and invert noodle cake onto sheet. Add additional Tbsp oil into skillet and slide in noodle cake. Cook until browned, about 2 minutes. Place noodle cake on serving platter. Tent with foil.

3. Heat additional 2 tsp oil in skillet over high heat until smoking. Cook half of chicken until lightly browned, about 3 minutes per side. Transfer to clean bowl. Repeat with 2 tsp oil and remaining chicken. Transfer to bowl.

4. Add remaining 2 tsp oil, chiles, garlic and peanuts to skillet and cook until fragrant, about 1 minute. Return chicken and any accumulated juices to skillet. Stir in sauce mixture and cook until slightly thickened, about 1 minute. Cut noodle cake into wedges and sprinkle with remaining scallions. Serve with chicken.

For Easy Noodle Cake:
With a spatula, evenly press the noodles across the bottom of a large nonstick skillet. Cook them over medium-high heat until they're crisp, then invert the hot noodles onto the back of a baking sheet. Add a Tbsp of oil to the skillet and slide the noodle cake back in. Cook until the noodles are browned, about 2 minutes.
