Ingredients
- 2 cups cooked diced chicken
- 8 oz thin egg noodles, cooked, drained
- 6 T butter
- 1 onion, chopped
- 2 cloves fresh garlic, minced
- 1 red bell pepper, chopped
- 6 T flour
- 1 pkg mixed frozen vegetables, thawed, heated
- 2 c chicken broth
- 1 c milk
- 1 1/2 t salt
- 1/2 t pepper
- 1/4 t red pepper
- 1/2 c grated cheese, plus more for topping

Preparation
Step 1
Preheat oven 350.
Grease 9x13 baking dish.
In a large skillet over low heat, melt butter and sauté onions, garlic and bell pepper. Stir in flour until smooth and bubbly. Gradually add chicken broth, milk, salt & pepper; stir constantly until sauce is thickened. Stir in chicken, thawed/heated veggies, ½ cup cheese, and cooked noodles. Spoon mixture into prepared baking dish. Sprinkle cheese on top and bake 20-25 minutes until hot and bubbly.
