Ingredients

  • filling:
  • 15 oz canned pumpkin
  • 2 eggs
  • 1 c veg oil
  • 2 c brown sugar
  • 1 tsp salt
  • 1 tsp each baking powder and baking soda
  • 1 tsp each cinnamon and ginger
  • 3 c flour
  • 2 t molasses
  • 8 oz cream cheese
  • 2 t room temp butter
  • 2 t maple syrup
  • 2 c powdered sugar
  • pinch salt
  • chopped pecans

Preparation

Step 1

preheat oven to 350
1) beat pumpkin,eggs and oil til fluffy

2) combine salt, baking powder, baking soda, cinnamon, ginger and flour

3)add molasses to dry and mix well

4) add dry to pumpkin and beat til fluffy

5)fill whoopie pie pans til 2/3 and bake til toothpick comes to dry when inserted

6) cream the cream cheese, butter and syrup. gradually add in sugar and pinch of salt

7) when pies are cooled, spread filling on half then assemble to a pie with no filling.

8) roll in chopped pecans
