Family favorite that I discovered the summer we spent a lot of time in Pittsburgh. Easy, great summer favorite.

Ingredients

  • 16 small red potatoes (halved)
  • 1 cup of chicken broth
  • 1/4 cup olive oil
  • 2 teaspoons dried thyme
  • 1/2 teaspoon salt
  • 1 each large gree, red and yellow pepper, julienned
  • 1 jar (15 oz) pearl onions, drained

Preparation

Step 1

In an ungreased 13 x 9 disposable foil pan, comein the potates, broth, oil, thyme and salt. Grill, covered over medium heat for 25 minutes

Stin in peppers and onions. Grill 25 to 30 minutes longer until tender.

Can also cook in over at 425 for similar time frame
