Ingredients

  • 2 Tb unsalted butter, divided
  • 1/2 c yellow onion, diced
  • 2 Tb flour
  • 1 c whole or 2% milk
  • 1/2 c heavy cream
  • 1 (5.2oz) pkg Boursin cheese
  • 1 (10 oz) frozen chopped spinach, thawed, squeezed dry of excess moisture.
  • 2 Tb grated Parmesan cheese
  • 1 tsp Lemon zest
  • 2/3 c. bread crumbs
  • 1 Tb olive oil
  • Salt, pepper, cayenne and nutmeg to taste

Preparation

Step 1

Preheat oven to 425; coat a shallow 2 cup baking dish with non-stick cooking spray and set aside.

Saute onions in 1 Tb butter in large saucepan over medium heat. Cook until onion is soft, about 5 mins.
Add flour and stir to coat onion. Cook about 1 min.
Gradually whisk milk and cream into onion mixture, stirring constantly to prevent lumps. Simmer sauce for 1 min.
Stir in Bourisn a little at a time until melted and smooth. Remove saucepan from heat.
Add spinach, parmesan, lemon zest & seasonings. Transfer spinach mixture to prepared baking dish.
Combine crumbs, butter, oil and seasonings. Tope spinach with crumbs, paking them to adhere.
(Dish may be covered and chilled at this point to baked later)
Place dish on baking sheet and bake until crumbs are golden and sauce is bubbly.

Bake 20-25 mins
