Roasted Garlic and Parmesan Dressing

Ingredients
- 1/4 cup shallot vinegar
- 1 tsp. salt
- 1 whole garlic head, roasted, cooled and squeezed
- 1/4 cup toasted pine nuts
- 1/4 cup grated Parmesan
- 1/4 cup minced basil leaves
- 1 cup olive oil
- 1/4 tsp. pepper

Preparation
Step 1
Place all ingredients in a dressing jar. Shake well and serve. Refrigerate leftover dressing for 1 week. Makes 1 1/2 cups.
