Ingredients

  • 1/4 cup shallot vinegar
  • 1 tsp. salt
  • 1 whole garlic head, roasted, cooled and squeezed
  • 1/4 cup toasted pine nuts
  • 1/4 cup grated Parmesan
  • 1/4 cup minced basil leaves
  • 1 cup olive oil
  • 1/4 tsp. pepper

Step 1

Place all ingredients in a dressing jar. Shake well and serve. Refrigerate leftover dressing for 1 week. Makes 1 1/2 cups.
