Ingredients

  • CAKE:
  • 1-1/2 cups oil
  • 4 eggs
  • 2 cups sugar
  • 2 cups sifted flour
  • 2 tsp baking powder
  • 1/2 tsp soda
  • 2 tsp cinnamon
  • 1 tsp salt
  • 2 cups grated carrots
  • 1 small can crushed pineapple
  • 1/2 cups chopped nuts
  • FROSTING:
  • 1 box(16-oz) powdered sugar, sifted
  • 1 stick butter
  • 1 tsp vanilla
  • 1 (8-oz) cream cheese, softened

Preparation

Step 1

Preheat oven to 350 degrees.
Mix oil, sugar, and eggs, beating well. Add dry ingredients (flour baking powder, soda, cinnamon, and salt)
Add carrots, pineapple and nuts. Mix well.

Pour into 2 (9-inch) canke pans than have been lined with parchment paper. Grease and flour.

Bake for 35 minutes or until test done with toothpick. Let rest for about 10 minutes then turn out onto
cake racks to cool then frost.

FROSTING:
Cream butter then add cream cheese, mixing well. Add powdered siugar and whip about 5 minutes until smooth and creamy. Stir in vanilla.

Spread some of frosting in between the two layers and then cover outside.
