• 3 beefsteak tomatoes
• 12 pieces of watermelon
• 10 pieces of sheeps milk feta cheese
• 4 T extra virgin olive oil
• 2 T fleur se sol
• Basil oil
• 2 cups basil
• ice bath
• 1 cup oil
• salt

Preparation

Step 1

Basil oil
blanch basil in boiling water
shock in ice bath
put in blender
add 1 cup of oil and salt , puree
pass through cloth

3 pieces of tomato, with 3 slices of melon with 2 pieces of feta
drizzle with olive oil, basil oil, balsamic

garnish with basil
