Strawberry Jam Coffee Cake
- For The Topping:
- 2 cups all-purpose flour
- 1/2 cup sugar
- 2 teaspoons baking powder
- 1/8 teaspoon salt
- 6 Tablespoons butter - softened
- 1 large egg - beaten
- 3/4 cup + 1 Tablespoon milk
- 1 teaspoon vanilla
- 1 cup strawberry jam
- 2/3 cup brown sugar - packed
- 2 Tablespoons all-purpose flour
- 2 Tablespoons butter - softened

Preheat oven to 350 degrees. Prepare a 9-inch square baking pan or two 8 inch round pans by coating the inside generously with butter.
Into a large bowl, sift together the flour, baking powder, and salt.
In a separate medium bowl, cream together the butter and sugar. Add the beaten egg, milk and vanilla and stir to combine.
Add the wet ingredients to the dry ingredients and mix until just combined and moistened. (The batter may seem too thick, but it will thin when the jam is added.)
Transfer batter to prepared pan. Dollop the jam on top and swirl it into the batter using the tip of knife.
In a small bowl, mix the topping ingredients together with a fork until crumbly. Sprinkle topping evenly over the coffee cake.
Bake for 25 to 30 minutes or until a toothpick inserted in the center comes out clean (no batter sticking to it).
