Ingredients
- 3cups3 cups all-purpose flour
- 2Tablespoons2 Tablespoons baking powder
- 2Tablespoons2 Tablespoons pumpkin pie spice
- 1teaspoon1 teaspoon baking soda
- 1/2teaspoon1/2 teaspoon salt
- 4large4 large eggs
- 1/2cup1/2 cup packed brown sugar
- 2cups2 cups unsweetened pumpkin puree
- 1 2/3cups1 2/3 cups 2% milk
- 1/2cup1/2 cup (1 stick) unsalted butter, melted
- Warm syrup and whipped cream (optional), for serving

Preparation
Step 1
1. Preheat your waffle iron!
2. In a medium bowl, whisk together the flour, baking powder, spice, baking soda and salt. In a separate medium bowl, whisk together the eggs, brown sugar, pumpkin, milk and butter. Whisk in the dry ingredients.
3. Scoop batter into your waffle iron and close the lid. Bake until done- usually 3 to 4 minutes (depending on what kind of waffle iron you have). Repeat with the remaining batter until you've used it all up. Serve warm with warm syrup (and maybe even whipped cream!)
