Preparation
Step 1
1. Peel, core and slice the apples (keep them in a large bowl of cool water until ready). An apple core and slicing contraption works beautifully for this, or you can use a 2mm slicer on the food processor).
2. Roll out the bottom pie crust and place in a 9 inch pie pan, with extra at the edges.
3. In a separate bowl combome the granulated sugar, flour, nutmeg, and salt.
4. In a large mixing bowl, place the sliced (well drained) apples. Add the sugar/flour mixture, and thoroughly mix.
5. Pour apple mixture over bottom pie crust until it mounds. Add several dabs of butter over the top of the apples.
6. Roll out top pie crust and place over apples. Pinch crust at the edges to make a good seal. With a sharp knife trim the excess pastry from around the edge of the pie pan. Cut 2 or 3 zig-zag designs in the center.
7. Pre-heat oven to 425 degrees. Bake pie at 425 for 15-20 mins, then at 350 degrees for 25 minutes more. When the crust becomes golden brown then the pie should be done. If the edge gets too brown, then cover with a strip of foil.
