Ingredients

  • 1/2 c shredded low-fat Swiss cheese
  • 1/4 c grated Parmesan
  • 6 c. steamed cauliflower
  • 3 T olive oil
  • 3 T flour
  • 1/4 tsp salt
  • Pinch of cayenne
  • 1 garlic clove – minced
  • 1 1/2 c fat free half & half
  • 1/2 c shredded low fat Swiss cheese
  • 3 oz Canadain bacon
  • 3 T chopped parsley

Preparation

Step 1

1.ix ½ c shredded low-fat Swiss cheese & grated Parmesan – set aside
2.Put steamed cauliflower florets in 2 qt. baking dish
3.Heat olive oil. Add flour, salt, cayenne; cook whisking 2 min.
4.Whisk in minced garlic.
5.Slowly add fat free half and half and cook, whisking until thickened. About 4 min.
6.Add another ½ c shredded low fat Swiss cheese, Canadian bacon strips and chopped parsley
7.Pour over cauliflower and top with the mixed cheeses. Broil 3-5 min.
