Crockpot Chicken and Cornmeal Dumplings

I did not expect this to be as good as it is. This became an immediate family favorite!

Ingredients

  • 2 c diced chicken
  • 2 c diced potatoes
  • 1 can of chicken broth
  • 1 12oz can of V8 (tomato juice cocktail)
  • 1 tsp chili powder
  • 6 drops of tabasco
  • 1/3 cup of yellow cornmeal
  • 1/2 cup chopped celery
  • 1/2 cup chopped onion
  • 1/2 tsp salt.
  • 1 1/4 cup packaged biscuit mix (bisquick)
  • 1 cup shredded cheddar cheese
  • 2/3 cup milk

Preparation

Step 1

*place chicken, broth, tomato juice, celery, onion, potatos, hot sauce, and chili pepper in the crockpot.
*cook on low for 4 hours.
*Turn temp up to high and cook until bubbly. If you need more water at this point,, add it.
*combine biscuit mix, cornmeal, and 1/2 cup of the cheese. Add milk and stir until just moistened.
*Drop by spoonfulls into bubbly broth and cook for an additional 2 1/2 hours.
*Sprinkle the rest of the cheese over the dish and serve.
