Ingredients
- Crust:
- 2/3 C sugar
- 1/2 c butter
- 1 tsp vanilla
- 1 egg
- 1 1/2 c flour
- Filling:
- 1 1/3 c sugar
- 1/4 tsp salt
- 2 tbles corn starch
- 4 eggs, separated
- 1 3/4 c water
- 2 table butter
- 1/2 c lemon juice
- Meringue:
- 4 egg whites
- 1/2 tsp cream of tartar
- 1/2 c sugar

Preparation
Step 1
Crust: mix sugar, butter, vanilla and egg. Add flout. Press into a 9x13 pan and bake at 350 for 15-20 minutes until golden brown
Filling: mix sugar, salt, corn starch and water. Bring to a boil. Add 1/2 mixture to egg yolks, return to pan and boil 2 minutes. Mix in butter and lemon juice. Spread onto cooled crust.
Meringue: Beat egg whites until soft peaks form, gradually add cream of tartar and sugar. Beat until stiff peaks form. Spread to 1/2 inch of sides.
Bake at 350 for 20 to 25 minutes. Meringue should be golden brown
