French Onion Soup - Crisscut's Recipe

Ingredients

  • 6 slices toasted french bread
  • zesty italian dressing
  • 3 lbs. sweet onions, sliced thin
  • 3 oz. butter
  • 1/2 clove garlic, pressed
  • 2 tbsp. worcestershire sauce
  • 2 quarts swanson's beef broth
  • salt
  • pepper
  • 1 small twist of lemon
  • kraft mozzarella or provolone cheese

Step 1

Brush both sides of french bread with italian dressing, broil or toast bread until both sides are crisp. Prepare a couple of hours ahead of time, leave out allowing bread to dry out and crisp up.

Saute onions in butter in heavy stockpot on medium-low heat until onions are caramelized (not burned). Add garlic and worcestershire sauce and cook another three minutes. Slowly add beef broth, stirring constantly until soup boils. Salt and pepper to taste. Add lemon twist. Lower heat and cover. Simmer for 20 minutes.

Ladle into individual oven-proof bowls, place a slice of bread over soup. Sprinkle cheese over toast. Broil in oven until cheese melts.

NOTES:
Serving suggestion:
Ladle hot soup in oven safe bowl, float a slice of italian bread or seasoned croutons on top of soup. Place generous slice of mozzarella cheese on top. Place under broiler until cheese begins to bubble and trun color. Serve immediately.
