Ingredients
- 2 tblsp butter
- 1 tblsp olive oil
- 1/2 cup onion
- 1 cup celery,diced
- 1 cup chopped carrots
- 1/2 cup fennel, chopped
- 1/2 cup chopped leeks
- 1/2 cup chopped ham
- 2 chopped garlic cloves
- 1/4 cup white wine
- 1 tsp thyme
- 1/2 tsp tarragon
- 2/3 cups lentils
- 4 cups chicken broth
- 1/4 cup cream

Preparation
Step 1
In a large saucepan, over medium heat, sauté the veg in oil and butter. Add the ham and herbs and then the wine. Reduce by half. Then add the broth and lentils and cook for 30 minutes till tender. Then add the cream and serve.
