Avocado, Mango & Macadamia Nut Salsa

This is perfect as a garnish for corn soup or to eat with chicken, fish or alone with chips!
Ingredients
- 1/4 lb macadamia nut, lightly chopped
- 2 rip avocados, diced
- 2 large tomatoes, diced
- 1 mango, diced
- 1/2 red onion, small dice
- 1 tbsp cilantro, chopped
- 2 limes, juiced
- 2 tsp honey
- 2 tsp olive oil
- salt and pepper to taste

Step 1
After cutting up the macadamia nut, avocado, tomato, mango and onion, mix the ingredients together in a large bowl and season with the lime juice, honey, olive oil and salt/pepper. Put aside in the refrigerator for 30 minutes so the salsa cools and the flavors combine.
Add in the chopped cilantro right before serving. Cutting cilantro as close as possible to eating helps produce the most flavor from fresh cilantro and this is something you should always do whenever using fresh herbs, especially cilantro.
