Ingredients
- 1 tablespoon olive oil
- 1 large onion, chopped
- 2 carrots, chopped
- 2 cloves garlic, chopped
- 2 teaspoons curry powder
- 1 cup long-grain white rice
- kosher salt and pepper
- 1 1/2 pounds large shrimp, peeled and deveined
- 1/2 cup fresh basil

Preparation
Step 1
1. Heat the oil in a large skillet over medium heat. Add the onion and
carrots and cook, stirring occasionally, until soft, 6 to 8 minutes.
2. Add the garlic and curry and cook, stirring, until fragrant, 2 minutes.
3. Add the rice, 2 1/2 cups water, 1/2 teaspoon salt, and 1/2 teaspoon
pepper and bring to a boil. Reduce heat to medium-low, cover, and simmer for
15 minutes.
