- 1/2 # PEELED AND DEVEINED SHRIMP
- 1/2 C SOUR CREAM
- 1/2 C MAYO
- 2 SCALLIONS COARSELY CHOPPED
- 1/4 C FINELY CHOPPED FRESH PARSLEY
- 1 t FINELY GRATED LEMON ZEST
- 2 t FRESH LEMON JUICE
- SLAT AND PEPPER
- CROSTINI, CRACKERS OR CRUDITES FOR SERVING

Step 1
COOK SHRIMP UNTIL OPAQUE THROUGHOUT. IMMEDIATELY TRANSFER TO A COLANDER AND RUN COLD WATER OVER THEM TO STOP THE COOKING. PAT SHRIMP DRY AND THEN FINELY CHOP.
IN A MEDIUM BOWL, COMBINE SHRIMP, SOUR CREAM, MAYO, SCALLIONS, PARSLEY, AND LEMON ZEST AND JUICE; SEASON WITH SALT AND PEPPER. CHILL SHRIMP DIP UNTIL COLD ALL THE WAY THROUGH.
