Slim and Trim Potato Salad

Ingredients

  • 4 med. potatoes
  • 2/3 c low-fat mayo
  • 1 stalk celery, thinly sliced (1/3 c)
  • 1/2 green pepper, chopped (1/3 c)
  • 1/4 c chopped onion
  • 1 T yellow mustard
  • 1 tsp cider vinegar
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 1 hard cooked egg, coarsely chopped

Preparation

Step 1

1. Wash potatoes and cut into 1 inch cubes, leaving skin on. Cook until just tender.

2. In large bowl, combine mayo, celery, green pepper, onion, mustard, vinegar, salt and black pepper.

3. Add potatoes and egg to mayo mixture. Toss lightly to mix. Cover and chill in the fridge at least 6 hours
