Ingredients

  • Cake:

  • 5

    eggs, beaten

  • 2

    cups sugar

  • cups vegetable oil

  • 3

    cups self rising flour

  • 1

    tsp baking soda

  • 2

    tsp cinnamon

  • 1

    tsp salt

  • 1

    cup raisins

  • 3

    cups finely grated carrots

  • ½

    cup crushed pineapple

  • ½

    cup sweetened flaked coconut

  • 1

    cup chopped pecans

  • Icing:

  • 1

    1lb package powdered sugar

  • 1

    package cream cheese

  • cups butter

  • 2

    tsp vanilla

  • 1

    cup chopped pecans

  • 1

    cup crushed pineapple, drained

  • 1

    cup sweetened flaked coconut

Directions

Preheat oven to 350F. Cake: 1. Blend eggs, sugar, and oil. 2. Sift flour, soda, cinnamon, and salt. 3. Fold in raisins, carrots, coconut, pecans, and pineapple. 4. Pour into 2 9" pans. 5. Bake for 40 minutes. Icing: 1. Blend first 4 ingredients. 2. stir in remaining ingredients. 3. Spread between layers and on top of cake.
