- 1 box Carrot Cake Mix
- 1 stick butter, softened
- 2 eggs
- 1/2 cup chopped pecans, optional
- Powdered sugar

Preparation
Step 1
Preheat oven to 350 degrees.
2. Combine cake mix, butter, and eggs.
3. Cover and refrigerate dough for one hour.
4. Using a cookie scoop, drop dough onto a greased cookie sheet.
5. Bake for 10-12 minutes, just until golden brown and springy to the touch.
6. Cool on a wire rack. Roll cooled cookies in powdered sugar.
